Thyme Honey is a rare and precious treasure harvested during the brief and unpredictable flowering of wild thyme, which greatly depends on weather conditions. Since thyme flowers produce less nectar than other melliferous plants, this honey is naturally scarce and highly valued.

Known for its rich aromatic profile, thyme honey offers a unique flavor that is powerful, warm and slightly spicy, with herbal notes typical of the Provençal maquis. This characterful honey delights lovers of intense flavors.

Harvested using traditional methods, it is cold-extracted to preserve all its nutritional and taste qualities.

When freshly collected, its texture is soft and creamy. Over time, it gently crystallizes into a denser form while remaining smooth and melt-in-the-mouth.

Its color ranges from deep golden yellow to coppery amber, depending on the richness of the soil, the climate and the concentration of thyme in the nectar. As it crystallizes, it takes on a pale ivory to light beige hue. The darker the honey, the higher its concentration of active compounds (naturally occurring polyphenols and essential oils from the thyme plant).
