Haute-Provence PDO olive oil is an exceptional oil, born of age-old expertise and a truly singular terroir. Produced in the heart of Provence, it proudly bears the Protected Designation of Origin (PDO) label, a guarantee of origin and excellence.
L'Or de Provence comes from olive groves set between 400 and 600 meters above sea level, where the Mediterranean climate meets Alpine influences. The olive trees thrive under generous sunshine in limestone and clay-rich soils. These conditions give rise to an olive oil with a distinct character and a subtle perfectly balanced flavor profile.
Our oil is crafted exclusively from the Aglandau variety, prized for its natural richness and excellent keeping qualities. This variety lends the oil an intensely fruity flavor with notes of artichoke, almond and green apple. A gentle bitterness and a delicate peppery finish round out the tasting experience, the hallmark of a genuinely authentic oil.
The olives are harvested at peak ripeness, then cold-pressed using mechanical methods within 24 hours of picking to preserve their full aroma and nutritional value. No chemical processing is involved, at any stage.
PDO Provence olive oil is valued for its traditional uses, its natural richness and its nutritional diversity.
This oil will enhance countless dishes, drizzled over salads, grilled vegetables or carpaccio. It can used in cooking with ratatouille, fish or roasted meats, or added as a finishing touch on cheese or desserts for a true Provençal flair.
